The Brick Oven

This last week, I had the privilege of visiting and photographing the Brick Oven Bakery in Northfield, MN. Showing up bright and early (4:30am) I was excited to see the goings on of this extraordinary place. Perhaps not as close to the Carleton campus as Goodbye Blue Monday or Quality Bakery, the Brick Oven is a destination seldom traveled to by students in search of a coffee or a cinnamon roll, but it's certainly worth the trip. The presence of the brick oven gives the bakery a very traditional and warm atmosphere, not to mention the breads are fantastic: baguettes, focaccia, challah and their famous caramel rolls. Looking inside through the heat, you could actually watch as the sourdough rose, turning a subtle red to match the brick oven.
